Culinary Director Nicolai Tuban

Nicolai Tuban, Culinary Director at Sand Hill Collection, was born in Mountain View and exposed to a wide variety of cuisines before deciding at an early age to pursue a career as a chef. After training at the Culinary Institute of Monterey, he joined Bon Appétit in 2008 and helmed some of the Bay Area’s premier tech and specialty dining accounts, before helping to open over 30 new restaurants as part of Bon Appétit’s corporate team. Nicolai’s culinary and agricultural passions include sourcing local ingredients, pickling and preserving, regenerative and holistic ranching, indigenous food traditions, and butchery, just to name a few.
